A mild White Chili made in a Crock Pot with Peruano Beans, Boneless Skinless Chicken Breasts, Brown Rice, fresh Zucchini Squash, Pepper Strips, and more… This will easily make about 8 – 10 servings. I divvy it up into Ziploc Containers for freezing and then easy lunches/dinners during the week.

Sofrito

I found¬† Sofrito when I was searching for Cuban Black Bean recipes. It’s a very simple way to add a lot of Latin flavor to any dish. And something my wife likes, Sofrito isn’t spicy (chili hot). The author’s site states: Sofrito is the secret ingredient in many Latin Caribbean dishes and it’s so easy to make. It’s a versatile, aromatic puree of tomatoes, peppers, cilantro, onions, and garlic. You may use a food processor or blender for desired results. This recipe makes about 1 quart of Sofrito. I scoop 1/2 cup portions into Ziploc sandwich bags and freeze for future cooking.
